Blueberry Pancakes

I enjoy having bread once in a while, but as with anything, it really needs to be eaten in moderation, so I am careful when it comes to baked goods with almond and coconut flour.  But I couldn't pass up on some delcious looking plump blueberries the other day and so I just had to make blueberry pancakes.  And I had to cheat a bit by having real maple syrup, locally produced of course.  Heck yes there is maple syrup in Iowa! 

1 c. almond flour
1/4 tsp. baking soda
1 egg
1 tbsp. coconut oil (melted)
1/2 tbsp. lemon juice
6 tbsp. almond milk
1/2 c. blueberries

Mix the almond flour and baking soda together.  Add the egg, coconut oil, lemon juice, and almond milk and mix well.  Fold in the blueberries.  Enjoy!

  1. It's as if you made these for me, Ginnie! They are fantastic and one of the only paleo pancakes I've found without honey or another sweetner in the batter. These turned out great!

  2. I don't know if I have blueberries (or any pancake-y type fruit for that matter), but I am headed to the kitchen to make these with or with out the fruit! Yummo! ---- Ohhhh. . . maybe I'll put bacon in the batter .... oh yeah!!!! Thanks for the recipe!

  3. best paleo pancake recipe ive tried so far...I did not have blueberries so I cut up bananas and added sliced almonds..amazing

  4. I had to use more coconut milk than in the recipe because it was half liquid and half solid in the can! Other wise I love this recipe!
